Ingredients

  • 2 whole chickens cut into parts
  • 2 cups lemon juice
  • 1-cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons minced garlic
  • 1/2 teaspoon dried oregano
  • Handful chopped Italian parsley
  • Red pepper flakes

Preparation

Step 1

Preheat broiler while prepping chicken
Mix together lemon juice along with everything except parsley & pepper flakes, put aside
Place chicken in baking pan with room so pieces don’t touch
Put in oven and broil until chicken is just about golden brown, then turn over on to other side and repeat
When both sides are golden brown remove chicken from oven and pour over lemon juice mix – make sure you get it good and coated on both sides
Put chicken back into broiler with lemon juice and cook for about 3 minutes on each side – keep an eye on it! You want it golden brown, not black!
Remove chicken from broiler, place cooked chicken in serving platter and place lemon juice in baking pan on to stove top on low heat put in handful of chopped parsley and desired amount of red pepper. You want the pepper as a little afterthought, don’t be heavy handed! Cook on high heat until juice boils, remove from heat and pour over chicken.
