Ingredients
- 3 cups carrots, sliced
- 3 cups potatoes, peeled and cubed
- 1 1/4 teaspoons dried thyme, divided
- 1/2 teaspoon coarse salt
- 1/4 teaspoon pepper
- 12 garlic cloves, peeled
- 6 bone-in skinless chicken thighs (2 to 2 1/2 pounds)
- 1/2 cup dry white wine or water
- 1/4 cup fat-free chicken broth
- Coarse salt and pepper to taste

Preparation
Step 1
Combine carrots, potatoes, 3/4 teaspoon thyme, salt, pepper and garlic in 4-quart or larger slow cooker. Place chicken on top of vegetables. Add wine (or water) and broth. Sprinkle with remaining thyme and additional salt and pepper to taste. Cover and cook on low for 7 hours. Divide carrots, potatoes, chicken and garlic among 4 bowls. Spoon cooking liquid over each serving.
