Fried Rice

Ingredients

  • 1 C Chicken
  • 1 Can of Shrimp-drained
  • 1 T. Soy Sauce
  • 1/2 t. Salt
  • 1/3 C Salad Oil
  • 2 1/2 C Water(more)
  • 5 Chicken Bouillon Cubes(dissolve in water above)
  • 2 Eggs
  • 2 C Raw Rice (uncooked)
  • 1 C Shredded Lettuce(optional)
  • Chopped Green Onion

Preparation

Step 1

Combine shrimp, salt and soy sauce and let stand 10-15 minutes. Heat oil in wok or electric skillet to approx. 350 degrees. Stir rice in oil frequently until evenly browned.
Add shrimp or chicken broth. Cover wok and reduce heat to a simmer on low. Cook 15-25 minutes or until rice is tender and all liquid is absorbed.
To complete drying remove cover for last few minutes. Push rice to one side and add eggs. Cook until semi-solid, then mix into rice mixture. If desired, add the lettuce for color and texture at last minutes.
