Ingredients
- 12 boneless chicken thighs
- 3 tablespoons chili powder
- 3 garlic cloves, minced
- salt and pepper to taste or 2 tsp. Homemade Adobo
- 1 packet chicken bouillon or chicken broth
- 1 teaspoon oregano
- 2 teaspoon cumin, ground
- 1 large green bell pepper, chopped
- 1 large onion, chopped
- 3 pickled jalapeno peppers, sliced
- 1 (28) ounce can fire roasted diced tomato
- 1 zucchini, cut in chunks
- 2 chipotles peppers in adobo, chopped(optional)
- 1 cup cilantro, chopped
Preparation
Step 1
Season chicken with 1 tablespoon of chili powder, 1 teaspoon of cumin, and adobo.
Saute seasoned chicken 3 to 4 minutes or until no longer pink. Remove.
In same skillet stir fry bell pepper, onion, and garlic until soft.
Add jalapenos, bouillon, tomatoes, oregano, remaining cumin, remaining chili powder and chipotle.
Cook for an additional 5 minutes, stirring occasionally.
Add chicken and simmer 15 minutes.
Add zucchini and cilantro. Serve over rice.
