Ingredients

  • Frosting:
  • 2 1/4 c Cake flour
  • 1 3/4 c Sugar
  • 4 tsp Baking powder
  • 1 tsp Salt
  • 12 tsp Butter, cut into pats
  • 6 egg whites
  • 1 c milk
  • 2 tsp vanilla extract
  • 2 egg whites
  • 1/4 tsp cream of tarter
  • 1/4 c sugar
  • 2/3 c corn syrup, light
  • 1 tsp vanilla extract

Step 1

Set oven to 350 degrees. Whisk together egg whites, milk, and vanilla. Set a side. In a larger bowl, combine flour, sugar, baking powder, and salt. Whisk together to combine. Add butter pats one at a time and mix until it forms little balls in the flour. Slowly add half the liquid, then beat on high till combined. Add remaining liquid and combine. Finish mixing by hand using a spatula or spoon. Pour batter into 2 9-inch pans and bake for 20-25 mins., till golden brown. Insert tooth pick in the middle and if it comes out dry, cake is ready.

Frosting:
Heat corn syrup in pan until it forms big bubbles around the side of the pan, remove from heat. Beat egg whites and cream of tarter until combines and then add the sugar and beat till you get soft peaks. Add the vanilla and corn syrup (its okay that the corn syrup is hot. When pouring into bowl, use the side of the bowl to pour the hot corn syrup into the mixture) beat on high until stiff peaks form. Ready to spread.
