Warm Spinach & Bacon Dip

“Set out plenty of chips. With the addition of crispy crumbled bacon, everyone will be eager to dunk into this creamy spinach dip.”

Ingredients

  • 4 strips bacon, chopped
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1 cup milk
  • 8 ounces cream cheese
  • 1/2 cup Cheddar cheese
  • 2 cups chopped fresh baby spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Corn chips or potato chips

Preparation

Step 1

Fry the bacon in a medium skillet over medium heat until crisp, about 4 minutes; transfer to a paper towel-lined plate to drain, reserving the drippings in the skillet.


Heat the bacon drippings over medium heat. Add the green onion and garlic and sauté for 30 seconds. Add the flour, stirring continually, until a paste forms, about 30 seconds more. Stir in the milk, cream cheese and Cheddar. Cook, stirring occasionally, until the mixture is thick and creamy, about 5 minutes.


Stir in the spinach, 1/2 of the bacon, salt and pepper and cook until the spinach is just wilted, about 1 minute. Transfer the dip to a serving bowl and sprinkle with the remaining bacon. Serve immediately with corn chips.

Variation

Make Mexican spinach dip. Add 2 tablespoons each tomato paste & canned diced green chilies with the milk & cream cheese in step 2. Substitute Monterey Jack for the Cheddar. Continue from step 3.
