Steak and Bean Chili

Ingredients

  • 1 TBL vegie oil
  • 2 LBS beef sirloin, cut into 1" cubes
  • 1 lg. onion, coarsely chopped
  • 1 med green bell pepper, chopped
  • 1 15.5-oz can pinto beans, drained & rinsed
  • 1 15.5-oz can kidney beans, drained & rinsed
  • 1 15.5-oz can black beans, drained & rinsed
  • 2 TBL reg. chili powder
  • 3 TBL grd cumin
  • 2 28-oz cans diced tomatoes, not drained

Preparation

Step 1

in lg dutch oven or stockpot, heat oil over med n=high heat

add 1/2 of beef & cook, stirring occasionally, until nicely browned
place browned beef in bowl & repeat w/ rest of beef

add onion & bell pepper to pot & cook for 2-3 min, stirring occasionally, until veggies are crisp-tender
stir in beans, chili powder, cumin & diced tomatoes

cover & cook over med heat for 10 min
add beef & cook uncovered, until beef is tender & heated through, abt. 5-8 min

serve in lg. bowls w/ topping of choice
