Ingredients
- Garnishes:
- 3 boneless skinless chicken breast diced
- 1 can rotel (Or a jar of salsa)
- 1 can corn
- 1 can chili beans (or black beans, or any other kind you like)
- 1 onion chopped
- 1 Tbls chopped garlic
- 1/4 tsp chipotle
- 1 tsp chili powder
- 1/2 tsp oregano
- 1/4 tsp smoked paprika
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 - 1 cup chicken stock
- You can add any other ingredient.... black olives, bell pepper would be good
- cooked rice
- shredded cheese
- green onions
- sour cream
- guacamole or sliced avocado
- tortilla chips
- cilantro
Preparation
Step 1
Put everything except the rice in the crock pot. Put in enough chicken stock (or you can use water) to cover the chicken and cook on low for 8 hours.
To make a soup, add more chicken stock.
Serve over rice and garnish with anything you like. I used cheese, sour cream, guacamole, green onions and tortilla chips.....It was delicious!!!
