- Salt
- Pepper
- 2 tbsp Vegetable Oil

Preparation
Step 1
Preheat oven to 350 degrees.
Place the meet on a rack in a heavy roasting pan and brush with oil, salt and pepper.
Depending on size, roast for approximately 2 1/2-3 hours. (See below)
Transfer to a carving board, cover with aluminum foil, and let stand for 10 minutes before carving.
6-8 lbs (2-4 ribs)
Medium Rare: 135 degrees (internal)
2 1/4-2 1/2 hours
Medium: 150 degrees (internal)
2 3/4-3 hours
8-10 lbs (4-5 ribs)
Medium Rare: 135 degrees (internal)
2 1/2-3 hours
Medium: 150 degrees (internal)
3-3 1/2 hours
