PINEAPPLE CHICKEN & RICE

Ingredients

  • 4 chicken breasts
  • 3/4 cup uncooked rice
  • 1 , 10 oz can pineapple chunks, juice reserved
  • 1 cup diced celery
  • 1 1/2 tsp salt
  • 1 tbsp soya sauce
  • 1 1/2 cups chicken stock
  • 1/4 tsp poultry seasoning

Preparation

Step 1

Brown chicken in butter. In 1 1/2 quart casserole, combine rice, pineapple juice, salt, poultry seasoning, soya sauce and chicken stock. Place chicken on top and cover. Bake at 350F for 1 1/2 hours. Uncover for last 15 minutes and add pineapple and celery. Garnish with pineapple slices and parsley, if desired.
