Freezer stuffed peppers

Ingredients

  • 1 c rice
  • 1 lb ground beef
  • 2 garlic cloves, minced
  • 1 t olive oil
  • 1 c frozen corn
  • 1 15oz can diced tomatoes
  • 2 t dried basil
  • salt & pepper

Preparation

Step 1

Post freezing ingredients:
4 green peppers
large stock pot filled 1/2 way with water
2c mozarella cheese

1. Cook rice
2. Cook garlic in oil, stir for 30 seconds
3. Add beef, stir
4. Once cooked add rice, corn, diced tomatoes, basil, salt & pepper
5. Cook till hot

Freeze in ziploc bag or container once cooled

To defrost remove from freezer ans place in fridge for 24 hour or on micro safe plate defrost till thawed.

Cook peppers in boiling water. Cook till tender, 4-5 minutes. Drain and fill with mixture.
