Couscous With Pistachios And Scallions

- 2 cups couscous
- 3/4 cup roasted unsalted pistachios coarsely chopped
- 1/2 cup minced scallions, white part and 1" green (abt 1 bunch)
- Salt to taste
- Freshly-ground black pepper to taste
Cook couscous according to package directions. Add pistachios and scallions, fluffing with a fork to combine. Season with salt and pepper.
This recipe yields 8 servings.
