Ham, Goat Cheese, and Green Tomato Relish Panini

Ingredients

  • 1 medium green tomato, seeded and diced
  • 1/2 c diced orange pepper
  • 1/2 c diced sweet onion
  • 2 Tbsp firmly packed brown sugar
  • 2 Tbsp rice vinegar
  • 2 Tbsp mayonnaise
  • 1/4 tsp crushed red pepper
  • 1 (16 oz) loaf ciabatta bread, halved lengthwise
  • 1 lb thick-sliced deli ham
  • 1 (4 oz) container crumbled goat cheese

Preparation

Step 1

In a medium bowl, stir together green tomato and next 6 ingredients. Cover and refrigerate for 2 hours.

Preheat a panini press according to manufacturer's directions.

Layer bottom half of bread with ham and cheese; using a slotted spoon, spoon green tomato mixture onto cheese, and cover with top half of bread.

Cook sandwich on panini press for 6 to 8 minutes or until bread is toasted and cheese is melted. Cut sandwich into fourths. Serve immediately.
