Ingredients

  • 1 lb boneless chicken breast - 1" cubed
  • 6-8 medium skin on red potatoes - 1/2" cubes
  • 1/3 olive oil
  • 1-1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp paprika
  • 2 tbsp garlic powder
  • 2 tbsp hot sauce
  • TOPPING
  • 2 cups fiesta blend cheese
  • 1 cup crumbled bacon
  • 1 cup diced green onion

Step 1

Preheat oven oven to 400. Spray 9x13 pan. Mix olive oil, salt, pepper, paprika, garlic and hot sauce. Add potatoes and chicken and toss. Put in dish. Bake for 50-60 minutes, stirring every 20 minutes until cooked through. Should be crispy and browned on the outside. While baking fry bacon. Once potatoes and chicken are fully cooked remove from oven. Top with cheese, bacon and onion. Return to oven and bake 5 minutes or until cheese is melted. Serve with hot sauce and ranch.
