Ingredients
- Cake:
- 1 cup flour
- 1 cup sugar
- 1 tsp. baking soda
- 1 egg
- 1 can mandarins (300 ml)
- Cream Cheese Icing:
- 1 pkge. cream cheese softened
- 1 tbsp. butter softened
- 1 tsp.vanilla
- 2 cups sifted icing sugar
- 1/2 cup chopped peacans (optional)

Preparation
Step 1
Mix all cake ingredients and pour into un-greased glass baking dish and cook at 350 for 30-40 minutes. Every oven is different so start checking at 30 minutes. It's ready when top is firm.
To make the icing, beat until all ingredients are well mixed and spread over cake.
