Mom’s Blueberry Muffins
- 1/2 cup butter, room temp
- 1 cup sugar
- 2 large eggs
- 1 tsp. vanilla
- 2 tsp. baking powder
- 1/4 tsp salt
- 2 1/2 cups blueberries (mash 1/2 cup with fork)
- 2 cups flour
- 1/2 cup milk
- 1 Tbsp sugar mixed with 1/4 tsp cinnamon
Preheat oven to 375°F. Put liners in 12 muffin cups.
In medium bowl, beat butter until creamy. Beat in sugar until pale and fluffy. Beat in eggs, one at a time. Beat in vanilla, baking soda, & salt.
Mix mashed blueberries into batter. Fold in half of flour with spatula, then half of milk.
Add remaining flour and millk. Fold in remaining blueberries.
Scoop batter into muffin cups. Sprinkle with cinnamon and sugar. Bake 30 mins or until golden brown. Let muffins cool 30 minutes before removing from pan.
