Cake - nutmeg cake

Ingredients

  • 2 cup self-raising flour
  • 2 cup brown sugar loosely packed
  • 125 g butter cold chopped
  • 2 tsp mixed spice
  • 1 tsp baking powder
  • 2 tsp ground nutmeg
  • 1 egg lightly beaten
  • 1 cup milk

Preparation

Step 1

STEP 1 Preheat oven to 180C and grease and line a 23 cm baking pan or springform pan.
STEP 2 In a large bowl, mix together the flour and sugar, mixed spice and half the nutmeg.
STEP 3 Rub the butter through the mix with your fingers, until all the butter is incorporated and the mixture feels like breadcrumbs.
STEP 4 Spoon almost half this mixture over the base of the baking pan.
STEP 5 Spread it evenly across the base, without packing it down too hard.
STEP 6 Keep the other half of the dry mix to one side.
STEP 7 In another bowl, whisk together the egg and the milk, then add the rest of the nutmeg and the baking soda and stir through.
STEP 8 Pour this into the remaining dry mixture and combine.
STEP 9 Pour over the base and bake for 45 minutes.
STEP 10 Allow to cool in the tin, then run a knife around the edge before removing,
