Ingredients

  • 1/2 cup vegetable oil
  • 6 large idaho or baking potatoes
  • 2 medium onions, quarted
  • 2 carrots, peeled and cut into chunks
  • 1 green zucchini, unpeeled and cut into chunks
  • 1 tbl salt
  • 1 tsp freshly ground black pepper
  • 21/2 tbl sugar
  • 1/2 cup matzo meal
  • 6 large eggs, beaten with a whisk

Preparation

Step 1

Preheat oven to 400 degrees. Place the oil in a 9 by 13 inch rectangular pan. Set aside. Fill a large bowl with cold water and some ice cubes. Peel the potatoes and place the potatoes into the bowl of cold water.
Finely chop onions & carrots in the container of a food processor fitted with metal blade & process until they are finely chopped. Scoop the onion/carrot mixture into a large bowl.
Cut the potatoes into chunks and place into food processor;process until almost finely chopped. Add the zucchini, process until completely grated with the colors flecked throughout potato mixture to the onion mixture.
Mix salt, pepper, sugar, and matza meal into the potato mixture. Using the spoon, press potato mixture to drain out any excess water. Stir in the eggs.
Place the baking pan with oil into the oven. When the oil sizzles, carefully remove and spoon some of it into the potato mixture, mixing well. (This will help make fluffy) Pour the potatoes into the oiled pan. Bake uncovered for 1hr.
