Double Chocolate Granola Bars (Yummly)

Ingredients

  • Nonstick spray
  • 2/3 cup old fashioned rolled oats*
  • 1/3 cup cocoa powder
  • 1/2 cup chopped walnuts
  • 1/4 cup shredded unsweetened coconut
  • 1/3 c. milk or semi-sweet chocolate chips**
  • 3 Tablespoons ground flax seeds
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt, or pinch of table salt
  • 1 cup mashed very ripe banana (about two medium)
  • 1/2 cup smooth peanut butter (not the natural kind)
  • 1 teaspoon vanilla extract

Preparation

Step 1

Preheat the oven to 350 degrees. Spray an 8″x8″ pan thoroughly with nonstick spray.

In a large mixing bowl, combine oats, cocoa powder, walnuts, coconut, chocolate chips, flax, cinnamon and salt. In a separate bowl, use a fork to mix together the banana and peanut butter into a paste. Then, mix in the vanilla extract. Now, add, the wet (banana & peanut butter) mixture to the dry and mix with a fork.

Press mixture firmly into the pan and use a spatula to make sure it is evenly distributed and level. Bake for 20 minutes, or the top becomes slightly hardened. Allow to cool completely, even consider chilling in the fridge, before slicing.

Store in an airtight container for up to a week. Makes 16 bars.
