Ingredients
- 4 eggs
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 cups water
- 4 cups all-purpose flour
Preparation
Step 1
In a medium bowl, stir together eggs, olive oil, 1 tablespoon salt, and 1 teaspoon pepper with 2 cups water. Gradually add flour, and stir until thick.
Using a large spoon and knife, scoop a spoonful of the dough and cut small pieces into the broth. Repeat until all the dough has been used. Stir, cover, and simmer for about 15 minutes.
I have easily halved and quartered this recipe depending on the amount of chicken or beef stew I am making. I drop the batter by scant half teaspoons into the simmering stew, cover and cook until they are done 15-20 minutes.
