Cold Asparagus With Truffle Mayonnaise
- Basic Boiled Asparagus (see recipe)
- 1 tablespoon extra-virgin olive oil
- Salt to taste
- Freshly-ground black pepper to taste
- 1/2 tablespoon truffle oil
- 1 cup your favorite mayonnaise
Toss the cold asparagus with the extra-virgin olive oil, salt and pepper. Stir truffle oil into the mayonnaise. Plate the asparagus. Spoon mayonnaise to one side of asparagus.
This recipe yields 4 servings.
