Kale and White Bean Saute

Ingredients

  • 1 leek, washed well and thinly sliced
  • 2 tsp. minced garlic
  • 2 tsp. minced garlic
  • 2 tsp. finely chopped fresh rosemary leaves
  • 1 tsp. smoked paprika
  • 1/4 tsp. salt. or to taste
  • 6 cups finely chopped kale leaves, stems discarded
  • 2/3 cup low-sodium chicken broth
  • 1 (15.5 oz.) can white cannellini beans, rinsed and drained
  • 1 (14.5oz.) can diced fire-roasted tomatoes, drained

Step 1

1. Add 1 tsp. of oil to a large nonstick skillet and heat over medium heat,add leek, garlic, rosemary, paprika and salt to the skillet. cook and stir until the leek is just softeded about 3 minutes. Add kale and broth and stir well to combine. Cover and cook for 6 minutes, stirring occasionally.
2. Stir beans and tomatoes into the kale. Cover and cook for 5 minutes and serve.
