Chicken Fajita Pizza

For this pizza, I just took the flavors of a fajita, and made them into pizza form. I used salsa as the pizza sauce, then added grilled chicken, bell peppers and onions with shredded Mexican cheeses. After baking, I garnished my pizza with some freshly chopped cilantro.

Ingredients

  • For the chipotle lime butter:
  • 1 (11 oz) package Pillsbury thin crust pizza dough
  • 1/2 cup mild salsa
  • 2 cups sliced grilled chicken
  • 1 1/2 cups red,green and yellow sliced bell peppers
  • 1/4 cup sliced red onion
  • 2 cups Mexican blend shredded cheese
  • 2 tablespoons freshly chopped cilantro, for garnish
  • 2 tablespoons butter
  • 1/4 teaspoon chipotle chili powder
  • 1 teaspoon lime juice

Preparation

Step 1

Heat oven to 400°. Stretch dough to the size of a jelly roll pan. Spread salsa over dough. Sprinkle 1 cup of the shredded cheese over salsa. Top with grilled chicken, bell peppers and onion. Add the rest of the cheese over pizza. Bake at 400° for 10 - 15 minutes, or until cheese has melted and pizza is starting to brown around the edges.

Garnish the pizza with fresh cilantro and crust with chipotle lime butter.
