Crisp Fried Onions

- 2 large onions (about 1lb total)
- 1/2 cup AP flour
- Vegetable oil
- Salt

Preparation
Step 1
Peel and thinly slice onions, separate into rings. Place flour in a bag, add onions, and shake to coat evenly.
In a deep 3-4 quart pan, heat about 1 1/2 inches oil to 300 degrees on a deep frying thermometer. Add onions, about a quarter at a time, and cook, stirring often, until golden (about 5 minutes). Oil temperature will drop at first and then rise as onion brown; regulate heat accordingly.
With a slotted spoon, lift out onions and drain on paper towels (discard any scorched bits) and salt immediately.
If made ahead, let cool completely, package airtight, and refrigerate for up to 3 days; to reheat, spread in a single layer in a shallow pan and place in a 350 degree oven until hot (about 2 minutes).
