Banana Muffins

Ingredients

  • 1 cup mashed banana (about 3 medium bananas)
  • 2 tablespoons milk
  • 2 teaspoons vanilla
  • 2 teaspoons vinegar
  • 1/4 cup peanut butter (or 3 tablespoons oil)
  • 1 cup flour
  • 1/2 teaspoon plus 1/8 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/3 cup sugar

Preparation

Step 1

Whisk first 5 ingredients in a large bowl, and set aside for 10 minutes. Preheat oven to 350 degrees. In a new bowl, stir together all remaining ingredients. Pour dry into wet, and stir until just evenly mixed. Portion into 10 muffin cups. Bake on center rack, 19-20 minutes or until muffins hove domed and a toothpick inserted into the center comes out mostly clean. Let cool. Cover loosely overnight and flavor and texture are even better!
