Lobster Bisque

Ingredients

  • 1 1/2 cups chicken broth
  • 2 med slices onion; chopped very small
  • 6 tbsp butter
  • 6 tbsp flour
  • 3 cups cream
  • 3/4 tsp salt
  • 3/4 tsp Worchestshire sauce
  • 1 1/2 tsp cayenne pepper
  • 1 1/2 lb lobster

Preparation

Step 1

1. Sauté stock and onion for 5-7 minutes
2. Remove ½ of the onions
3. Melt butter and whisk flour into a roux
4. Add remaining ingredients
5. Heat well- do not boil
