Italian Chocolate Mousse

Ingredients

  • 6 oz bittersweet chocolate; chopped
  • 4 eggs
  • 2 tsp sugar
  • 1/4 cup brewed espresso (optional)
  • 2/3 cup very cold heavy whipping cream

Preparation

Step 1

1. Melt chocolate in double broiler
2. Combine egg yolks and sugar in a large bowl and whisk
3. Stir in melted chocolate, then add espresso
4. Mix with spatula until combined
5. Whisk cream until stiff peaks form
6. Fold cream into chocolate mixture w/ spatula
7. In a medium bowl, whip egg whites with beater until they form stiff peaks
8. Then fold into mixture
9. Spoon into serving cups. Serves 4-6
