Ingredients
- 2 Tbsp cumin
- 2 tsp coriander
- 2 lbs boneless chicken breasts, diced
- 2 onions, chopped
- 4 carrots, chopped
- 4 parsnips, peeled and chopped
- 4 garlic cloves, minced
- 1 tsp cinnamon
- 1 can (28 oz) diced tomatoes, drained
- 1 cup chicken stock
- 1/2 cup white wine
- 4 cups prepared couscous
- chopped fresh parsley for garnish
Preparation
Step 1
Combine all ingredients except couscous and parsley in the slow cooker. Stir to combine. Cook on low for 6-8 hours, until vegetables are tender and chicken is cooked through. Serve immediately over warm couscous and garnish with parsley.
