Ingredients
- 2 medium beets
- 1/2 red onion,diced
- 1/2 -1 jalepeno,seeded and diced(depends how hot you want it)
- 2 Tbs fresh parsley
- 1 1/2 Tbs olive oil
- 1 Tbs honey
- juice of 1/2 lime
- kosher salt to taste

Preparation
Step 1
wrap beets in foil and roast at 400 until fork tender. Let cool. Using gloves gently pull the skin off the beets. Dice the beets and place into a small bowl. Add onions,jalapeno,parsley,olive oil,honey,lime and salt.
