Vegan Egg Muffins

Ingredients

  • 2 1/2 cups chickpea flour
  • 2 cups water
  • 1/4 cup nooch
  • 1 heaping tsp baking powder
  • 1 tsp salt
  • lots of black pepper
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • pinch turmeric
  • veggies - bell pepper, scallions, jalapeño, corn

Preparation

Step 1

mix all dry ingredients
add water
add veggies
spray muffin pan with oil
add batter
bake 375 30-40 minutes
