  • 2 cups whole wheat pastry flour
  • 1 cup oats
  • 1 cup light brown sugar
  • 1/4 teaspoon salt
  • 3/4 cup coconut softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups low sugar peach preserves
  • 1/2 cup walnuts, chopped

Step 1

Heat the oven to 350 degrees and lightly spray a nonstick 13 x 9 baking dish with cooking spray.
Combine ingredients very well in a large bowl EXCEPT peach preserves and walnuts.
Spread the dough out into the baking dish and pat down evenly.
Spread peach preserves evenly over the top and sprinkle with walnuts.
Bake for 30 - 40 minutes until the preserves are bubbly on the edges, and the dough underneath is cooked through.
