Ingredients
- 1/4 loaf of country bread and cut bread into 1/2 inch cubes
- 7 tomatoes
- 1/2 cup champagne vinegar
- 1/4 cup EVOO
- 2 cups cubed watermelon
- 1/2 chopped red onion
- 1/2 cup chopped basil
- 1/2 sliced cucmber
- 2 oz ricotta salata coarsely grated
Preparation
Step 1
BREAD
Preheat oven to 350 degrees
Remove crust 1/4 loaf of country bread and cut bread into 1/2 inch cubes
Bake until lightly browned, about 2 minutes
DRESSING
Blend 4 chopped tomatoes and 1/2 cup champagne vinegar in a food processor
While processing drizzle 1/4 cup EVOO
In a large bowl combine 3 diced tomatoes. 2 cups cubed watermelon, 1/2 chopped red onion, 1/2 cup chopped basil, 1/2 sliced cucmber, 2 oz ricotta salata coarsely grated, toasted bread and dressing.
Toss well and serve.
