Dad's Ginger Fluff Sponge

Ingredients

  • 4 eggs separated
  • 3/4 cup caster sugar
  • 3/4 cup corn flour
  • 1/2 teaspoon cinnamon
  • 2 big teaspoons ginger
  • 1 big teaspoon cocoa
  • 1 level teaspoon cream of tartar
  • 11/2 level teaspoon carb soda
  • 1 desert spoon golden syrup

Preparation

Step 1

Sift dry ingredients once
beat egg whites and a pinch of salt until very fluffy
add egg yolks one at a time
add golden syrup
sift in dry ingredients and fold into mix with a spoon with a hole in it, lift up and you fold in
pour into 2 greased and floured sponge tins
bake at 200 celsius for 20 mins
