This is a delicious cake-like brownie recipe that I got from my sister in law in, yes, Texas. The coffee adds a light flavor complexity, the frosting has a slightly chewy texture which makes it a hit with me.

Ingredients

  • 2 cups flour 1/2 cup margarine
  • 2 cups sugar 2 tablespoons cocoa
  • 1/2 cup margarine 1/4 cup milk
  • 1/2 cup shortening 1 1/2 cups powdered sugar
  • 2 eggs 1 teaspoon vanilla
  • 1 cup coffee
  • 1/4 cup unsweetened cocoa
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Step 1

In large mixing bowl combine flour and sugar. Meanwhile, in heavy pan combine margarine, shortening, coffee and cocoa. Heat at medium, stirring constantly until mixture boils. Pour over flour/sugar mixture and add remaining ingredients. Mix, pour into greased 10 x 14 pan, bake at 400 degrees for 20 minutes.
Meanwhile, prepare frosting. Combine margarine, cocoa and milk in medium pan. Heat on medium and stir constantly until mixture boils. Mix in powdered sugar and vanilla, mixing until it is smooth.
Let brownies cool 5 minutes, then pour warm frosting over the top.
