Pico de Gallo

Ingredients

  • 2 medium tomatoes, seeded and diced
  • 1/4 c. diced white onion
  • 1 serrano or jalapeno pepper, seeded and finely chopped
  • 2 Tb. lime juice
  • 1 Tb. extra virgin olive oil
  • 1 medium ripe avocado, (opt.) diced
  • salt to taste

Preparation

Step 1

Toss together first 5 ingredients and, if desired, avocado in a medium bowl. cover and chill 1 hour. Season with salt to taste.
