Summer Potatoes

Ingredients
- 28 oz. baby red potatoes, halved
- 4 Tbsp. white wine
- 1/4 c. extra virgin olive oil
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. wine or sherry vinegar
- 2 Tbsp fresh chopped parsley
- 2 scallions, chopped
- salt (to taste)

Preparation
Step 1
-In large pot, steam potatoes in their jackets until tender (about 18 minutes)
-Place in bowl and add wine, oil, lemon juice and vinegar
-Let sit about 15 minutes until liquid is absorbed by the potatoes
-Toss, add remaining ingredients and serve
