BASMATI****Basmati Rice and Mustard-Seed Pilaf

03/03/13 - Made this in the rice cooker for the first time and although it was very good, the rice was still somewhat hard when done. Increase the liquid next time by 2 tbsp. and see if that solves the problem.

Ingredients
- 2 shallots
- 1 tsp. EVOO
- 1/2 tsp. sesame oil
- 1 tsp. mustard seeds (black or yellor or mixture)
- 1/4 cup brown basmati rice
- 1/2 cup chicken broth
Preparation
Step 1
* Thinly slice shallots and in a saucepan cook in oil over moderate heat, stirring occasionally, until golden. Stir in mustard seeds and cook until they begin to pop. Add rice and cook, stirring, 1 minute. Add broth and scrape into rice cooker. Cook on brown rice cycle until done (at least 1 1/2 hours)
* Garnish with thinly sliced green onions, if desired.
