Winter Soup

Ingredients

  • 1 c dried lentils, washed
  • 2 qts water
  • 1/4 c tomato sauce
  • 2 t salt
  • 1 t oregano
  • 1/2-1 t basil
  • 1/2 t thyme
  • fresh ground pepper
  • 1 clove garlic, minced
  • 2 stalks celery, sliced
  • 1 onion, sliced
  • 3 carrots, sliced
  • 6 mushrooms, sliced
  • 1 baking potato, unpeeled and cut into chunks
  • 1/3 c fresh parsley
  • 2 16 oz cans tomatoes, drained
  • 4 oz pork sausage, browned and well drained
  • 1 T butter
  • lots of fresh grated parmesan cheese

Preparation

Step 1

Combine all ingredients except tomatoes, sausage, butter, and parmesan cheese. Cover and simmer for 1 hour. Add tomatoes and browned sausage; simmer 15-30 min longer. Add butter, blending into soup. Sprinkle each serving with parmesan cheese.
