Chile Rellenos

Ingredients

  • 2 4oz cans whole green chile peppers
  • 3/4 lb Monterey Jack cheese, shredded
  • 3/4 lb cheddar cheese, shredded
  • 9 3/4 oz evaporated milk
  • 6 eggs, beaten slightly

Preparation

Step 1

Wash, seed, and slit open chiles. Place on bottom of 8x10 baking dish. Layer with Jack cheese and cheddar cheese. Mix mild and eggs together and pour over cheeses. Bake at 350 for 40 min. Allow to cool for 10 minutes before cutting.
