GARLIC SAUTEED SPINICH

Rinse 1 ½ lb. baby spinach leaves. In very large skillet sauté 6 cloves garlic and 2 tbsp olive oil for one minute over medium heat. Then add spinach and salt and pepper and toss with oil and garlic, cover and cook 2 minutes. Uncover and turn heat up to high and cook one more minute, stir with wooden spoon. Use slotte spoon and lift out into serving bowl. Add butter and a squeeze of lemon and sprinkle with sea or kosher salt. Serve hot. I tried it on 12-30-06 and I liked it, Jax tried it and she did not like it.
