heat 8-12 large jalapenos in 400 degree oven for 10 minutes, flip over and heat another ten minutes. Remove and let cool. Then cut slit and remove insides. Then mix 4 oz cram cheese with ¾ c shredded cheddar or Monterey Jack cheese and salt. Put in zip lock baggie and cut tip and pipe it in the jalapenos. Then squeeze closed and then mix 3 large eggs in one dish and 1 ½ c bread crumbs in another dish. Roll in egg then put in bread crumbs and press gently to coat, shake off excess and repeat. Then put in heavy bottom pot with enough vegetable oil to be 1 ½ deep and heat to 325 degrees. Cook about 2 – 3 minutes per batch. Remove and put on paper lined plate to drain. I tried this on 1/12/10 and they were very good but I did it in fondue pot and oil not deep enough. Also I used panko bread crumbs and they did not stick, so next time deeper oil and use actual bread crumbs. They would be good for a party but would probably cool quickly.
