Step 1

in an electric mixer, mix 1 stick softened butter and 8 oz softened crumbled blue cheese for one minute. Then on low speed mix 1 ½ c flour, salt and pepper and mix until in large crumbles (about one minute). Then add 1 tbsp water and mix until combined. Dump the dough on a floured board and press into a ball then roll into a 12 inch log and brush log with egg wash (one large egg beaten with 1 tbsp water). Then press into ½ c roughly chopped walnuts. Cool for at least 30 minutes and cook in a preheated 350 degree oven for 22 minutes. Cut the crackers into 3/8 inch pieces. Rotate pan once during baking. Cool and serve at room temperature. I tried this on 12/31/08. There was way too much blue cheese, maybe put half the amount in. Also too salty so do not add much salt. Also, the crackers do not expand at all, I cut them too thick so make sure they are thin. Probably a good topping would be a light cheese and meat or maybe a light dip.
