FRESH BERRIES WITH CREME ANGLAISE

Step 1

in a pot heat ½ c milk with ½ c half and half and heat to just before boiling. Meanwhile in a double boiler on medium heat whisk together 5 egg yolks, pinch of salt, 1/3 c sugar and one vanilla bean. Whisk for 20 seconds then add milk mixture on small incriments, divided into fourths, mix with wooden spoon entire time until just before boiling, about 170 degrees. If it boils the eggs will curtle. Then off heat and cool. Remove vanilla bean and scrape out insides. Then mix well. I tried this on 1/25/09 and it was very good. Pour over any mixed berries, kids loved it, for fancy presentation put in a cocktail glass.
