preheat oven to 400 degrees. Mix 3 Granny Smith apples that were peeled, cored and quartered and sliced small and put in a large bowl and mix with 1 tsp grated orange zest, 3 tbsp fresh squeezed orange juice immediately to prevent then from browning. Then add to the mixture 3 tbsp dried cherries, 3 tbsp sugar, 1 tbsp flour, ¼ tsp cinnamon, 1/8 tsp nutmeg and a pinch of kocher salt. Then mix well. Then flour a board and roll out a puff pastry sheet to 12x12. Cut this into fourths and keep cool. Add apple mixture and brush edge with egg wash and then fold over at a diagonal and seal edge by pressing with fork. Put them on a parchment lined cookie sheet and sprinkle sugar on top. Cut slits in top to let steam escape. Bake for 20 minutes. We tried this on 1/09 and all but kyle loved it. They were very good.
