Squash and Vegetable Saute

  • 3 tbsp. butter or margarine
  • 3 cups sliced zucchini or yellow squash
  • 3 cups shredded cabbage
  • 3/4 cup chopped green pepper
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. oregano
  • 1/4 tsp. diced thyme
  • 1 tbsp. vinegar


Servings 6


Step 1

Melt butter in skillet.
Add squash or zucchini and cabbage
Cover and cook over medium heat for about 5 min.
Uncover and add green pepper.
Cook over low heat, turning occasionally with spatula until squash/zucchini is tender-about 10 min.
Stir in seasonings, herbs and vinegar.
