Frico

Ingredients

  • 1 tablespoon Filippo Berio extra virgin olive oil
  • 1 onion, grated
  • 1 medium all-purpose potato, peeled and grated
  • 1 1/2 cups shredded Montasio cheese
  • Salt to taste

Preparation

Step 1

Heat the olive oil in a non-stick pan and add the onion and potato and cook until they begin to brown.  Spread the cheese evenly over the top and continue cooking until the frico sets up.  Turn it out onto a dish and slide it back into the pan to cook the other side until golden brown.
