Ingredients
- 1 tablespoon olive oil
- 5 pieces sliced bacon
- 1 large onion, chopped
- 1 tablespoon garlic, chopped
- 12 Quahogs, shucked and chopped (reserve juices and shells)
- 1 cup corn kernels
- 1 cup bread crumbs
- 1 pinch oregano
- 1 pinch sage
- 1 pinch salt, as required
- 1 pinch pepper, as required
- 1 cup mayonnaise, blended with 1/4 cup chipoltle chillies, to taste (optional)
Preparation
Step 1
Preheat oven to 350 degrees.
in a large pan over medium heat,cook bacon in the vegetable oil until bacon starts to color slightly, about 5 minutes.
Add onion, garlic, chopped quahogs and reserved juices. Reduce heat and simmer until most of the liquid has evaporated.
Add the bread crumbs, corn, herbs, salt and pepper. Mound the mixture, loosely packed in 12 quahog shells.
Place stuffed quahogs on a rectangular baking sheet. Place pan in oven and bake until the filling is bubbling and browned, about 8 minutes.
Garnish with optional chipoltle mayonnaise, if desired.
