Harvest Day Soup

Ingredients

  • 1 pound sausage
  • 1 large onion finely chopped
  • 2 1/2 cups chicken broth
  • 2 cups canned pumpkin
  • 1 teaspoon lemon juice
  • 2 cups hot milk
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • Salt to taste
  • Freshly-ground black pepper to taste
  • Chopped parsley for garnish

Preparation

Step 1

In large frying pan, brown and crumble sausage. Remove sausage and sauté onions in drippings.

In large pot or Slow cooker, add all the ingredients. Heat until hot. Serve sprinkled with parsley. Refrigerate leftovers.

This recipe yields 8 to 10 servings.
