Ingredients

  • 2

    c white wine

  • 2

    cans chicken broth

  • 1

    can evaporated milk

  • 4

    lemons, juice and zest

  • 1

    onion

  • 8

    oz. mushrooms

  • 1

    T butter

  • 1

    T olive oil

  • 1/4

    c capers with juice

  • salt to taste

  • Top with:

  • roasted pine nuts

  • parmesan cheese

  • fresh chives

Directions

Saute mushrooms in butter and olive oil. Add wine and reduce to half. Add 1 t flour, then the broth and evaporated milk, lemon juice, zest, and capers. Add salt to taste. Serve over chicken and rice.
