Fragrant Chicken (or Beef) Curry

Ingredients
- 2 T curry powder
- 1 t turmeric
- 1/2 t cinnamon
- 1/4 t cayenne pepper
- 1/4 t cardamom
- 1 large onion, thinly sliced
- 3 garlic cloves, minced
- 1 can light coconut milk
- 1 can diced tomatoes
- 1 can chicken broth
- 1/2 c brown sugar

Preparation
Step 1
Mix spices in small bowl. heat oil in dutch oven over medium high heat add onion and saute until golden (8-10 min) Add garlic, saute until fragrant (about 30 seconds).
Add spices; toast until fragrant. Add rotisserie chicken or cooked beef, stir until completely coated with spices. Add coconut milk, tomatoes, and broth. Bring to a simmer; cook uncovered until flavors blend and stew is thick. About 20 minutes.
Remove from heat, sprinkle with cilantro and serve over basmati rice. Can be served with mango chutney.
